Description

Disodium pyrophosphate is a chemical compound with the formula Na2H2P2O7, also known as disodium dihydrogen diphosphate. It is a white, water-soluble powder that is mildly acidic with a pH of 4.1. Disodium pytophosphate is commonly used in various industries due to its unique properties, such as its ability to act as a leavening agent, preservative, sequestrant, and buffer.

Uses

Used in Baking Industry:
Disodium pyrophosphate is used as a leavening agent in doughnuts and biscuits, providing a variable gas release rate during the mixing, bench action, and baking process. It is also used in baking powder to help dough rise and improve the texture of baked goods.
Used in Canned Fish Products:
In the canned fish industry, disodium pyrophosphate is used to reduce the level of undesired struvite crystals (magnesium ammonium phosphate hexahydrate) by complexing the magnesium. This helps maintain the quality and appearance of the canned fish products.
Used in Processed Potatoes:
Disodium pyrophosphate is used to sequester metals in processed potatoes, which helps prevent discoloration and maintains the product's quality.
Used in Dental Care Products:
In the dental care industry, disodium pyrophosphate is used for the prevention of tartar formation. Its ability to sequester metals and regulate pH makes it an effective ingredient in dental care products.
Used in Buffers:
Sodium pyrophosphate dibasic, the anhydrous form of the compound, is used in buffers to maintain a stable pH level in various applications.
Chemical Properties:
Disodium dihydrogendiphosphate has a molar mass of 221.97 and a density of 2.31. It is moderately soluble in water, with a solubility of 13g Na2H2P2O7/100g H2O at 20°C and 20g at 80°C. The usual commercial product is the anhydrous, non-hygroscopic salt in powder form. The hexahydrate form, Na2H2P2O7.6H2O, crystallizes from aqueous solution below 27°C and converts to the anhydrous form above this temperature. Disodium diphosphate is also used as an acid carrier in baking powder, for improvement of flow properties in flour, and for pH regulation in various applications.

Preparation

Disodium dihydrogendiphosphate is produced from sodium dihydrogenmonophosphate by heating at 200-250℃:Na2CO3+2H3PO4→2NaH2PO4+H2O+CO2↑2NaH2PO4→Na2H2P2O7+H2O

Flammability and Explosibility

Nonflammable

Biochem/physiol Actions

Amyloid precursor protein α is an α-secretase-cleaved soluble protein that has been shown to have neuroprotective properties. It is derived from amyloid precursor protein. The protein consists of 612 amino acids. Several G protein-coupled receptors are known to activate α-secretase-dependent processing of APP. It has neuroprotective, neurogenic and neurotrophic functions. Amyloid precursor protein a also stimulates gene expression and protein expression.

Safety Profile

Poison by intravenous route. Moderately toxic by ingestion and subcutaneous routes. An irritant to skin, eyes, and mucous membranes. When heated to decomposition it emits toxic fumes of POx, and Na2O.

Check Digit Verification of cas no

The CAS Registry Mumber 7758-16-9 includes 7 digits separated into 3 groups by hyphens. The first part of the number, starting from the left, has 4 digits, 7,7,5 and 8 respectively; the second part has 2 digits, 1 and 6 respectively.
Calculate Digit Verification of CAS Registry Number 7758-16:
(6*7)+(5*7)+(4*5)+(3*8)+(2*1)+(1*6)=129
129 % 10 = 9
So 7758-16-9 is a valid CAS Registry Number.
