  • Antisweet activity of gymnemic acid A1 (cas 11035-38-4) and its derivatives
  • Add time:08/17/2019         Source:sciencedirect.com

A method was derived to isolate gymnemic acid A1 (cas 11035-38-4), a main component of gymnemic acid A, for preparative purpose. Acids esterified in the genin of gymnemic acid A1 were determined to be 1 mole of acetic, 2 moles of isovaleric and 1 mole of tiglic acids. Gymnemic acid A1 was converted into A2, and finally into A3 by alkaline hydrolysis. Antisweet activity of A1 was greatly decreased by conversion into A2, while A3 and had no activity. It is suggested that the ester group in the genin has an important role in the manifestation of the antisweet activity of gymnemic acid A1. Studies regarding antisweet activity of gymnemic acid on other sweet compounds besides sugars indicated that gymnemic acid A1 suppresses the sweet taste of cyclamate, D-amino acids, beryllium chloride, and lead acetate and that it does no suppress the sweet taste of chloroform.
