Description

Myristica fragrans, ext. is a spice derived from the evergreen tree native to various islands in the Indian Ocean, including Java, Sumatra, and Borneo. The tree produces yellow-red fruits with a fleshy pericarp, and the red arillode tightly wraps around a woody hull containing the seed. The dried aril yields the spice mace, which has a flavor similar to that of nutmeg. The parts used are the nuts (free of the outer pulp) and arillodes (decolorized with lime).
