Juniper, Juniperus communis, ext. is a thickly branched tree resembling a shrub that can reach several meters in height. It grows in dry areas across Europe, Asia, Africa, and North America. Juniper is characterized by its irregular stem, sharp thorn-tipped leaves, and round, blue-violet berries. The berries, which can be used when more or less ripe, are wrinkled or dried and possess an aromatic odor and a bitter taste. The essential oil of Juniper is obtained by steam distillation of the nonfermented berries, resulting in a colorless to yellow liquid with a characteristic odor and aromatic bitter taste. The oil yield varies depending on the fermentation state of the berries, with nonfermented berries yielding 0.5 to 0.6% and fermented berries yielding 0.8 to 1.6%. The essential oil contains various chemical constituents, such as P-pinene, myrcene, d-limonene, cymene, camphene, αand y-cadinene, which can vary depending on the plant's origin. Terpeneless or sesquiterpeneless essential oils are produced for specific applications. Juniper derivatives include infusion, distillation waters, distillate in 60 to 75% ethanol, and fluid and soft aqueous extracts.
