Usage

Description

Amylopectin is a glucose-based, highly-branched polysaccharide that, along with amylose, constitutes starch. It is characterized by α-1,4 glucosidic bonds in the glucan chain and α-1,6 bonds at the branch points. Amylopectin from maize has a distinct structure compared to that from other plant species and is utilized in the study and development of starches. It is a component of the water-insoluble fraction of starch and is a hexosan, a polymer of glucose, with a branched structure of many glucose units. Amylopectin forms a paste with water and stains violet with iodine. It is also a substrate for α-amylase.
