  • Many people think that most of toxic plants are wild ones. In fact, some kinds of food crops, oil crops, vegetables and fruits are all probably cause toxicosis. These homely dishes include French bean, broad bean, cassava, shepherd’s purse, and so on.

    French contains a kind of deadly toxin called “saponin”. If French bean is not cooked, saponin will strongly stimulate digestive tract. In addition, French bean contains prothrombin which can cause coagulation. Nitrite and trypsin contained in French bean can stimulate the human intestines and stomach, make people toxic, and cause gastroenteritis symptoms. In order to avoid the poisoning situation, French bean must be cooked thoroughly.

    Broad bean contains a kind of deadly toxin called “vicine”. If people eat vicine, people will get acute hemolytic anemia. In spring and autumn, as tender broad bean is always cooked improperly, the poisoning incidents always happen. The poisoning will outbreak after 4 to 24 hours of eating uncooked bean. In order to prevent the poisoning caused by tender broad bean, people should not eat tender broad beans as much as possible and should cook broad beans thoroughly.

    Uncooked soya-bean milk is also dangerous. Raw beans contain toxic ingredients. If raw beans are not cooked thoroughly, the poisoning will be caused. When the soya-bean milk is heated to 80 degrees, saponin will be heated to expand and ostensible boiling will be produced. At this moment, toxic substances like saponin are not completely destroyed. If the soya-bean milk is drunk, gastroenteritis symptoms will be caused. In order to prevent the poisoning caused by raw soya-bean milk, the soya-bean milk should be heated to 100 degrees when ostensible boiling appeared. If soya-bean milk is cooked thoroughly, there should be no foam in it. The disappeared foams also mean that toxic substances have already been destroyed. Then the soya-bean milk should be boiled for another 10 minutes by soft fire. After all these procedures, soya-bean milk is safe to be drunk.

    The deadly toxin contained in shepherd’s purse is nitrite. Shepherd's purse contains much nitrite. Excessive nitrite can oxidize hemoglobin inside human body into ferrihemoglobin. In addition, nitrite can stop the release of oxygen by oxyhemoglobin and further cause oxygen lack of organism and poisoning. In fact, it is easy to avoid nitrite poisoning. What you need to do is to eat fresh shepherd's purse as much as possible. Pickles should not be eaten until being washed after one month’s curing process.

    Therefore, even ordinary foods in our daily life should be paid great attention to in order to keep ourselves healthy.
