substances such as flavones, cyanidin and tannins.The character of anthocyanins is as follows: it presents stable purple red shade in acidic
environment, it becomes purplish when the environment changes to neutral,and it goes to blue or green shade when the environment changes
into strong alkaline. Anthocyanin keeps stable only in the acid environment.
