Function:

Purple sweet potato powder is a purely natural ingredient extracted from purple sweet potato that is planted locally, and is rich in anthocyanin and minerals.

Its main composition is anthocyanins, therefore, it has anti-oxidation, anti-aging and anti-fatigue effect, and can enhance body immunity for long term consumption. Purple sweet potato powder has characteristic scent of potato with pure and soft taste. Its color won’t fade under light; also it can endure high temperatures in acidic media, but changes with pH condition. When it used in acidic condition, the color is ranging from red to purple-red and is unstable when PH is above 6. When it is used in alkaline condition, the color becomes to purple-blue because it’s easy coordination with metal ions.

Application:

It can be widely used in the noodles, the steamed bun, the candy, Kentuckey, Macdonald, fast food, etc. You can add purple potato powder to soups, breads, dips, and certainly any savory mix, such as meatloaf, stew, pizza, or hamburger. Divide the food to be colored into multiple bowls and add your coloring ingredients by bowl, so that the colors remain as unmixed as possible until serving time.
