Chemical Properties White to light brown amorphous powder. Soluble in water, aqueous solution is colorless to pale yellow, sometimes milky white, insoluble in ethanol, chloroform and ether. Is a glycoprotein. The main principle of action is to hydrolyze polypeptides to low molecular weight peptides. There is also the role of hydrolysis of amide bonds and esters. The molecular weight is about 33,000, the pH of the isoelectric point is 9.35, the optimum pH is 6-8, and the optimum temperature is 55°C.
