Superiority:

Chemical Properties White to light yellow fibrous powder or meal. Almost odorless and tasteless. Dissolved in water to form a viscous colloidal solution. Soluble in dilute organic acid solution, and according to the degree of esterification soluble 60% ethanol solution.

Gels can be formed in acidic solutions with a pH of 3-4, and no precipitation occurs.

Uses Stabilizers; thickeners; emulsifiers; foaming agents; spice extraction solvents.
