Introduction：

Xylanase is a high concentrated powder xylanase enzyme made from high quality strain of Trichoderma reesei by submerged fermentation and refined extraction technology. Xylanase degrades β-1,4-xylosidase from xylan molecule and hydrolysate it into xylo-oligosaccharides and xylose. It is widely applied in industries of animal feed, beer brewing, distillery, paper and pulp and etc.

Suitable condition:

The reaction temperature is 40-60℃, optimum 50℃.，PH value is 4.5-6.0, optimum 5.0

Application range:

For flour products processing:

Xylanase can degrade araboxylan, especially the water insoluble xylan. Not only improve the mechanical properties of dough, but also increase the volume of bread, improve bread quality and delay aging.

1. Increase the volume of bread
