Lactase, also known as beta-Galactosidase, is a digestive enzyme found in the human body and is the most important digestive enzyme in infants and children whose main source of nutrition is breast milk/formula. The main function of lactase is to digest lactose and hydrolyse it into galactose and glucose that can be absorbed by the body. Lactase deficiency in the body can cause impaired digestion and absorption of lactose, with some patients experiencing clinical symptoms of indigestion such as abdominal pain, flatulence and diarrhoea, known as lactose intolerance. Lactase is mainly used in the dairy industry to convert low-sweetness and low-solubility lactose into sweeter, more soluble monosaccharides; making the precipitation of lactose crystals in ice cream, milk concentrate and light condensed milk less likely, while increasing sweetness.
