Sodium diacetate is a molecular compound of sodium acetate and acetic acid, which is associated by short hydrogen bonds. White hygroscopic crystalline powder, non-toxic, with acetic acid odor, soluble in water (1g/ml) and ethanol. Decomposed by heating to above 1500 °C, emitting smoke and irritating sourness. The pH of the aqueous solution is 4.5 to 5.0 (10% aqueous solution).
