6. Because glycine is an amphoteric ion with amino and carboxyl groups, it has a strong buffering effect. It can buffer the taste of salt and vinegar. The amount of salt and acid added was 0.3% ~ 0.7% and 0.05% ~ 0.5% respectively.
The antiseptic effect can inhibit the propagation of Bacillus subtilis and Escherichia coli. Therefore, it can be used as preservative of surimi products and peanut butter, with the addition amount of 1% ~ 2%.
