D-Psicose ( D-allulose , D-ribo-2-hexulose , C 6 H 12 O 6) is a low-energy monosaccharide sugar presentin small quantities in natural products. First identified in wheat more than 70 years ago, psicose is a C-3epimer of D-fructose, and is present in small quantities in agricultural products and commerciallyprepared carbohydrate complexes.

Allulose: classified into hexose and ketose, it is the epimer corresponding to the third carbon of D-fructose. IUPAC name (3R, 4R, 5R)-1,3,4,5,6-pentahydroxyhexan-2-one. It has special functions that are beneficial to human health, such as regulating blood sugar, and is evaluated as the most potential sucrose substitute by the US Food Navigation Network. It's mainly prepared by enzymei mmobilization and transformation method, which not only clones and expresses the enzyme, separates and refines it, and then transforms it through appropriate carrier fixation.
