It can be used as a full replacement for gum Arabic in a variety of food emulsions and can sometimes be used at a reduced level. The superior functionality of starch sodium octenyl succinate permits the preparation of very fine stable emulsions, often at reduced pressures or shear which results in additional energy savings. Beverage emulsions containing starch sodium octenyl succinate are very stable in viscosity and emulsion proterties even when stored at low temperatures for extended period of time.
