Coumarin is white crystal, citronella aroma, and slightly medicinal fragrance. Insoluble in cold water, soluble in hot water, ethanol, ether, chloroform.

Coumarin was discovered in black coumarin in 1820. Coumarin is found in many plants in the form of glycosides. Strong aromas of black bean, fresh mowing sweetness and chocolate, long lasting. The fresh hay aroma is largely due to the formation and release of coumarin when glycosides are decomposed by fermentation during the drying of fresh mowing. Coumarin is used to make spices. Commonly used in the preparation of new mowed and flat spices. As well as violet, sunflower, vegetable Chemicalbook heart orchid, hawthorn flower, orchid, lavender and other essences. It can be used with vanillin as a flavoring for confectionery, pastries and the like, and added to tobacco to add a natural flavor. Coumarin is the raw material for other flavors and a variety of other chemicals. Coumarin is the parent of a large class of derivatives.
