Carboxymethyl cellulose (CMC) is synthesized by a base-catalyzed reaction of cellulose and chloroacetic acid. Polar (organic acid) carboxyl groups make cellulose soluble and chemically reactive. The functional properties of Fooding Carboxy Methyl Cellulose (CMC) depend on the degree of substitution of the Cellulose structure (i.e. how many hydroxyl groups are involved in the substitution reaction), as well as the chain length of the Cellulose skeleton structure and the degree of aggregation of carboxymethyl substituent groups.
