Sodium alginate is also known as alginate sodium, alginate sodium, alginate sodium, alginate gum, kelp gum, alginate sodium. The main composition is alginate sodium salt, is a mixture of aldehyde acid glycan. A gel extracted from brown seaweed such as kelp. It is white or light yellow powder, odorless, tasteless, moisture absorption, relative density 1.59, bulk density 87.39kg/m3, wet content 13%, ash 23%, blackening temperature 150ºC, carbonization temperature 340ºC(46Chemicalbook0ºC), ash temperature 480ºC, combustion heat 10.46J/g, Insoluble in ethanol, ether or , etc. Soluble in hot and cold water, 1% aqueous solution pH value is 6 ~ 8, can form a thick colloidal solution, and easy to blend with protein, starch, pectin, Arabic gum, carboxymethyl cellulose, sucrose, glycerin and sorbitol. Insoluble in dilute acids with pH less than 3. The viscosity is stable when the pH is 6-9, and decreases when the temperature is above 80ºC.
