DL-malic acid is a mixture of D-malic acid and L-malic acid. Malic acid, also known as: 2-hydroxysuccinic acid, has two stereoisomers due to an asymmetric carbon atom in the molecule. That is, the left-handed body (L-malic acid) and the right-handed body (D-malic acid). In nature, malic acid exists in three forms, namely D-malic acid, L-malic acid and DL-malic acid.
1. In the food industry, DL-malic acid is used as sour agent, color retainer, preservative and emulsion stabilizer of egg yolk, etc., and is also used in pharmaceuticals. DL-malic acid is used as a sour agent for refreshing drinks (such as lactic acid bacteria drinks, milk drinks, soda, cola), frozen foods (such as sherbet, ice cream, etc.), processed foods (such as cider, mayonnaise), fruit drinks, etc. Emulsion stabilizer for color retaining agent, preservative and egg yolk etc.
2. As a commonly used food additive and flavoring agent, DL-malic acid is widely used in jelly and fruit-based foods, which helps food absorption and improves appetite.
3. DL-malic acid is used in the textile industry as a coagulation inhibitor and as a raw material for fluorescent whitening agents.
