Lactose is a disaccharide that occurs naturally in mammalian milk. It is secreted by the mammary glands of mammals and is found only in animals. Molecular formula C12H22O11. It is a disaccharide composed of glucose and galactose, that is, by the hydroxy group on the fourth carbon atom of glucose and the β-hemiacetal hydroxyl group of the first carbon atom of galactose. Therefore, the reducibility of aldehyde groups on glucose molecules is still maintained. There are two isomers, alpha - and beta -. Below 93.5℃ crystallization from the mother liquor is α-type lactose, containing one molecule of crystal water, melting point 202℃, specific rotation +88°, solubility 7.4 grams. At 93.5℃ above crystallization of β-type lactose, melting point 252℃, specific rotation +34°, solubility 55 grams, there is no crystal water in the molecule. α-type sugars have low hygroscopicity and do not absorb external water in higher humidity environments, which is extremely important for controlling water activity in food. In dehydrated milk and whey products, lactose often exists in amorphous crystals, strong moisture absorption, solubility of 20 grams (room temperature), sweetness is only 30% of sucrose, not suitable for sweeteners, only in the production of low sweetness or special flavor foods can be used. The content of lactose in liquid whey is about 6.5%, after deester and clarification, it is concentrated at 55 ~ 60℃, so that it becomes a solid, and the content can be increased to 55 ~ 65%. After cooling treatment, a large number of crystals can be obtained, remove the mother liquor and crystal washing, you can obtain a slightly yellow edible lactose, its purity can reach 99.6%, if recrystallized, you can obtain high purity medical lactose. The lactose content in human milk and cow milk is 5-7% and 4%, respectively. Lactose is commonly used in baby food, and is also widely used in the food industry in beverages, western sausages, sauces, instant foods, spices and meat products to supplement the low sweetness, enhance the aroma, extend the sale period and increase the value of the product. It can also be made into other derivatives (such as heterotropic emulsified sugar) for processing different foods, and is also commonly used as a tablet for tablets.
