Tannase is an extracellular enzyme produced by Aspergillus Niger. This enzyme acts as a lipase, breaking down tannin into tannic acid. It can be used to remove tannin in fruit juice, tea beverage and beer industry.

Enzyme preparation. It is mainly used to decompose the tannin in the production of instant tea to improve the cold solubility of the finished product and avoid turbidity during cooling after hot dissolution. When used, add 2.5g tannase preparation per liter into the tea Chemicalbook leaf extract with pH value of 5.5 ~ 6, then stir at 30℃ for 70min, then heat up to 90℃ to eliminate the enzyme, and centrifuge to remove the tannase.
