PRODUCT DESCRIPTION
YL-N50 is a liquid formulated bacterial endopeptidase (metallo- & serine protease) enzyme preparation for hydrolysing high molecular protein into low molecular peptides. This product is characterized by its ability to hydrolyse a broad range of substrates ideally at neutral pH. Typical protein substrates include casein, whey, meat, fish, soy, gelatin and some grain types. It is also recommended for hydrolising protein in distilling and brewing. It is produced by controlled fermentation of a classical strain of Bacillus subtilis.
PRODUCT CHARACTERISTICS
Liquid formulation.
Composition: protease concentrate (40%, specific protein: 1.5%), glycerol (30%), sorbitol (30%).
Light brown colour with characteristic aromatic odour.

APPLICATION
It is characterized by its ability to hydrolyse a broad range of substrates preferably around neutral pH. It is ideally suited for (food grade) protein hydrolysis applications in which pH adjustment is either not feasible or not necessary. it may be used either as a single enzyme or in combination with other proteinases or other enzyme activities.
Protein hydrolysis applications: it is used for the hydrolysis of proteins from several sources. Typical applications include the production of hydrolysates of wheat gluten, soya protein, gelatine, upgrade of fish protein from by-products and milk proteins. It is used either as a single enzyme or in combination with other proteinases. Brewing: In the brewery it is used to supply the missing protease activity when processing barley or low-quality malt. It is not inhibited by barleyprotease-inhibitors and therefore high values of a-amino-nitrogen are achieved.The addition is carried out during the mashing.
Distilling: Depending on the type of cereals used for alcohol production and depending on the quality of the grain, the enzymatic hydrolysis of starch may partially be blocked by the existence of a protein-starch-matrix.
This may lead to poor alcohol yields. The use of it improves the separation of protein from starch and increases the alcohol yield. It forms low molecular peptides, which do not sediment at the wall of the mash tun, the fermenters or the distilling equipment and therefore incrustations in these equipments are reduced or avoided.

STORAGE & HANDLING
When stored in the original, unopened packaging at dry conditions and at temperatures <10 °C, it is best used within 24 months from the date of production. Avoid unnecessary contact with enzyme preparations during handling and avoid the formation of aerosols. Repeated inhalation of enzyme aerosol may cause sensitisation and possibly allergic type reactions in sensitised individuals.
