The optimal pH for enzyme catalysis varies slightly depending on the hydrogen donor, but is mostly around pH 5. Enzyme is soluble in water and ammonium sulfate solution with a saturation of less than 58%. The maximum absorption spectra of HRP cofactors and enzyme proteins are 403nm and 275nm, respectively, and the purity of the enzyme is generally represented by the ratio RZ (Reinheit Zahl in German) of OD403nm/OD275nm. The smaller the RZ value, the more non enzymatic proteins there are
