Purpose:
Benzoic acid is an important acidic food preservative. Under acidic conditions, it has inhibitory effects on mold, yeast, and bacteria, but has weaker effects on acid producing bacteria. The optimal pH value for antibacterial activity is 2.5-4.0, generally lower than pH 4.5-5.0. The maximum usage of concentrated fruit and vegetable juice in plastic barrels used in the food industry shall not exceed 2.0g/kg; The maximum dosage for jam (excluding canned goods), fruit juice (flavored) beverages, soy sauce, and vinegar is 1.0g/kg; The maximum usage amount in gummies, wine, and fruit wine is 0.8g/kg; In low salt Pickled vegetables, sauces and preserves, the maximum use amount is 0.5g/kg; The maximum usage amount in carbonated beverages is 0.2g/kg. Due to the slight solubility of benzoic acid in water, a small amount of ethanol can be used to dissolve it during use.

Properties：It is a white, silky scale or needle shaped crystal with a slight odor of benzoin or benzaldehyde. Sublimation at approximately 100 ℃, relative density 1.316, boiling point 249.2 ℃, melting point 121.7 ℃ -123 ℃. Difficult to dissolve in water (0.34g/100ml, 25 ℃), soluble in boiling water (4.55g/100ml, 90 ℃), ethanol, chloroform and ether, as well as non-volatile oils and volatile oils.
