The oxidations of oleoyl residue of its esters with ethylene glycol, glycerol and erythritol were measured at 80 °C and 0% relative humidity. The oxidation rate of each substrate could be expressed by the rate expression of the autocatalytic type. The susceptibility of oleoyl residue to oxidation largely depended on the number of oleoyl residues in the substrates. For the ethylene glycol and glycerol esters with the same number of oleoyl residues, the oleoyl ethylene glycols were oxidized faster than the oleoyl glycerols. However, monooleoyl erythritol was, on the other hand, more slowly oxidized than dioleoyl erythritol. The addition of glycerol to methyl oleate hardly affected the oxidation of methyl oleate.
