Amino acids are the building blocks for all proteins, which are the most abundant organic compounds in the human body and play major roles in various biochemical functions. This chapter illustrates the basic structures of 20 amino acids in 4 different classifications according to their unique functional groups. Then, their distinctive properties and roles in protein structure and functions are discussed in the text. In addition to a deficiency or an excess of amino acid in certain diseases, therapeutically used amino acids and their derivatives are also outlined in this chapter.
