    The relationship between antioxidants and acrylamide formation deserves investigation. Both positive and negative results were obtained. Antioxidants with different structures or functional groups can react with acrylamide precursors, reaction intermediates, or acrylamide itself, leading to either reducing or promoting effects. Acrylamide content, as the final result of both positive and negative reactions, depends on the predominant reaction that antioxidants and substrates undergo, which may change when the antioxidant concentration varies. The fact that the same antioxidant or that extract and its representative components behave discordantly might be due to the different reaction conditions among studies, the antioxidant concentrations, and the preparation methods. The relationship between antioxidant capacity and acrylamide inhibition remains controversial. A close correlation between ΔTEAC and acrylamide inhibition was lately found. However, more in-depth studies are still needed.
