Colorless crystals or white power, without odor, with sour taste, stable in air, compound of equal quantity ofdextro-rotatory and levo-rotatory tartaric acid, containing one or two molecule crystalline water and losting water when heated to 100°C, specific gravity 1.697. Its solubility in ether is about 1% and 5.01(25°C) in ethanol, in water is 20.60(20°C).

Also applied in tanning, photo, glass, enamel and telecom materials industries. Its acidity is as 1.3 times as citric acid, so specially as acidifying agent for grape juice.
