Definition
Xylitol is one five carbon sugar alcohol, white crystal granule or powder, sweet, similar sweetness with cane sugar, easily dissolve into water(around 160g/100ml), slightly dissolve into ethanol and methanol, melting point of 91℃-96℃,boiling point of 216℃.
Physiological & Chemical Characters
From structure there’re no aldo and keto, so no Millard reaction after heating, and can be used to make bakery with different flavors.
Can proliferate bifidobacteria and improve the health of stomach and intestine.
Can’t be fermented by yeast, so can be as bad culture medium to microorganism.
Can give cool feeling in the mouth;
Hygroscopic, can be used to make some soft snack, cake etc.
