Phytic acid (PA)3 or myo-inositol hexakisphosphate is a common constituent of plants; it is stored largely as a complex salt of Mg2+, K+, together with proteins within subcelllular single-membrane particles in grains and seeds. This molecule is an inhibitor of mineral absorption because the negative charges of the phosphate groups form insoluble salts upon interaction with di- and trivalent cations. Phytate thus causes deficiencies in minerals such as Ca, Fe and Zn when present in excess in the human diet (Maga 1982 ). To improve mineral bioavailability, PA levels may be decreased by phytase, an enzyme that catalyzes the stepwise hydrolysis of phytate to phosphate and inositol via penta- to monophosphates.
Properties:Its appearance is white powder. It contains 12 acid groups which are able to complex with metals to form white insoluble mineral salts. Its easily soluble in water, almost insoluble in pure ether and hexane. It exists naturally in form of phytin.
Applications: Phytic acid can prevent acute alcohol poisoning. Phytic Acid is used in food processing industry to reduce fermentation time and to prevent the change of properties or colors and oxidation in foods and wines due to its powerful chelating function. For industrial applications, it is widely used as the additive of metal coating and cleaning, as corrosion inhibitor for metal surface, desensitizers in ink, hard water treatment agent, gathering of rare earth and precious metals, anti knocking agent, antioxidant, preservative, and stabilizer.
Usages in Aquatic Products: Phytic acid is suitable to be preservative agent used for aquatic products, e.g. prawn freezing, adding amount is about 0.05%-0.1% phytic acid solution. In Japan, 0.1~0.5% phytic acid is added to shellfish cans to prevent discoloring.
Under 100℃, adding 0.3% Phytic acid can prevent fish body discoloring in two minutes. Solution mixed with 0.01-0.05% phytic acid and micro-citric acid is effective preservative agent for fruit, vegetable and flower.
Used for Can Food: It is effectively against discoloring by adding phytic acid in canned food.
Phytic acid, added in aquatic products cans, such as prawn and cuttlefish, can prevent resultant of struvite. So we call it struvite preventing agent, which is widely used in canned foods. The adding amount is about 0.05~0.1%.
Used in Beverage Products: It can chelate surplus metallic ions (specially harmful heavy metal), and effectively protect
human body by adding 0.01-0.05% phytic acid in drinks. In Japan, Europe and USA market, phytic acid is used as metal discharging agent in beverage production.

Act as Anti-oxidant: It has excellent oxidization resistance for vegetable oil ( blending one part of 50% phytic acid and three parts of sorbitol fatty acid, then adding into vegetable oil with content of 0.2%), the oxidization effect is excellent. Phytic acid can prevent decomposition of hydrogen peroxide, so it can be used as storing stabilizer for hydrogen peroxide.
Residue allowed in end food products should not more than 0.02%
