Main function and purpose:
Cream of tartar can be used as leavening agent and acidity regulator in China. The maximum usage is 250g/kg. Actual reference quality is among 10%-25%, when it is used as bulk agent in baking. It can be added into fruit jam as acidity regulator with other acid to keep the PH value of between 2.8-3.5.

Keep away from moisture,direct sun light and rain.Avoid to store with alkaline and substances with oxidizing properties together.
