Details:

Ursolic acid is an organic compound with molecular formula c30h48o3. It is a natural triterpene carboxylic acid and can be used as an emulsifier in food. It is hydrolyzed by saponins containing ursolic acid. In some plant raw materials, ursolic acid exists in the form of saponins. The saponins must be hydrolyzed before they can be extracted and separated by solvent. Saponins can be hydrolyzed by acid or enzyme. The hydrolysis rate of saponins is related to the concentration of hydrogen ions. Organic acids such as 20% acetic acid have almost no hydrolysis, and their dissociation constants are also low in sulfuric acid and phosphoric acid solutions, At the same concentration, its catalytic capacity is not as good as hydrochloric acid and bromic acid, so hydrochloric acid is often used for hydrolysis.
