Carrageenan is a food additive, and the food grade carrageenan is white to pale yellowish brown, the surface of the shriveled, slightly shiny translucent flake or powder, odorless, tasteless, sticky taste. The gel formed by carrageenan is heat reversible, that is, it melts into a solution when heated, and when the solution is cooled, it forms a gel again. Carrageenan is widely used in the food industry because of its good water retention, thickening, emulsification, gelatinization, safety and non-toxic characteristics. It is widely used in the manufacture of jelly, ice cream, pastry, fudge, canned meat products, rice porridge, white fungus bird's nest, soup food, cold food and so on.
