Mung bean protein is composed of globulin, albumin and gliadin, 80% of which are globulin. Mung bean protein is composed of 17 kinds of amino acids, including 7 kinds of essential amino acids, especially rich in lysine, the first limiting amino acid generally lacking in other grains.
