The first examples of deacetylation of Sucrose octaacetate (cas 126-14-7) using proteases and lipases in organic solvents are reported. The regiochemistry of the product sucrose hepta-, hexa- and pentaacetates was established by perdeuteroacetylation and 1H-NMR. Preparation of key intermediates in the commercial synthesis of the high intensity sweetener, sucralose was achieved.
