Furthermore, if collagen is sufficiently denatured, e.g. by heating, it can be used to produce gelatin which is used in many foods, including flavored gelatin desserts. This chemical is also frequently used in scientific research applications for cell culture, studying cell behavior and cellular interactions with the extracellular environment.
