With the CAS registry number 9000-92-4, Amylase is also named as Enzyme, amylolytic. The product's categories are 3.2.x.x Glycosidases; 3.x.x.x Hydrolases; Enzyme Class Index. The other registry numbers are 8049-91-0, 9000-93-5 and 9014-71-5. It is light yellow or white amorphous powder which is stable and incompatible with strong oxidizing agents. And it was slightly turbid when soluble in water. In addition, this chemical is almost insoluble in ethanol. Besides, it should be stored at the temperature of 2-8 °C.
Preparation of Amylase: It can be obtained by Aspergillus niger var., Asp.orzae vsr., Rhizopus oryzaevar., Tricho-derma roesei; var. and other variation bacteria and mould.
Uses of Amylase: It is used in the desizing process of textiles. It is also used as zymin which is mainly used for the improving of bread dough in the production of bread, vegetable processing, manufacturing syrup, malt sugar production, dextrin powder, glucose and other processing.
