Sodium alginate, with the cas number 9005-38-3, is a pure type of dried, ground kelp (seaweed) - it's commonly used to thicken food. The chemical compound sodium alginate is the sodium salt of alginic acid and it is also used in indigestion tablets. Sodium alginate has no discernable flavor. Sodium alginate works as a cold gelling agent that needs no heat to gel. It gels in the presence of calcium compounds.

Uses of Sodium alginate:
The major application for Sodium alginate is as thickener for reactive dyestuffs in textile screen-printing and carpet jet-printing. It is a good chelator for pulling radioactive toxins such as iodine-131 and strontium-90 from the body which have taken the place of their non-radioactive counterparts. It is also used in immobilizing enzymes by inclusion. It is used by the foods industry to increase viscosity and as an emulsifier.Another major use of sodium alginate is reactive dye printing,and it is also used in the textile industry.
What's more, sodium alginate works as a cold gelling agent that needs no heat to gel. It gels in the presence of calcium compounds. Most commonly used with calcium chloride to make caviar and spheres. It dilutes while cold with strong agitation. Heat is not needed to produce spherification. Sodium alginate can also be used to produce foams.
