Propylene glycol alginate (abbreviated as PGA) is a natural seaweed extract - an enzyme of alginate derivatives. It occurs as white to yellowish brown filamentous, grainy, granular or powdered forms. The conversion of alginate/alginic acid to its proylene glycol alginate (PGA) changes the behavior of the polymer in many ways compared to standard alginate. As compared to sodium alginates, it has reduced sensitivity to acid and calcium salts. PGA is a good seaweed based food additive which has excellent performance.

2. Basic Information of Propylene glycol alginate
PGA has special functions in emulsifying, stabilizing, thickening and decentralizing, which allow it to be widely used in juice, beer, salad dressing, emulsified essence, acidic protein drinks, cosmetic, condiments, etc.
PGA is the most efficient and commonly used beer foam stablizer worldwide with its use well understood and documented. PGA beer foam stablizer has the highest level of esterification availabale on the market, giving superior head retention and greater protection against foam collapse caused by foam-negative contaminants.

PGA is almost odourless tasteless, and it is soluble in water forming sticky colloid solution, soluble in dilute organic acid solution, and according to the degree of esterification in concentration below 60% ethanol aqueous solution. In pH value for 3 ~ 4 acidic solution can form gel, do not produce precipitation. Resistance to salt out sex strong, even in strong electrolyte solution, nor salting out. To chromium, iron (3 price), copper, lead, barium plasma is not stable, to other metals ion stability. The concentration of acid solution viscosity rise is increased.

3) use
1. PGA in Beer, improve the performance of bubble,increase bubble's adhensive ability and improve beer's appearance. Conteract some components, action which can eliminate bubble in beer. Increase the life-span of the bubble. Make bubble more exquisite.
2. PGA in Dairy industry PGA can endow yoghourt with good texture and taste. PGA can effectively prevent product from forming a coarse surface and make the product has a smooth and glossy exterior. PGA can fully mix with other additives and can be used in a wide PH range, just gentle mixing can mix PGA evenly into yoghourt. PGA has good solubility and ability to disperse; it also has good stability in the heating process. PGA can be used as stabilizer and emulsifier.
