Inulin is a reserve polysaccharide in plants, which mainly comes from plants. More than 36000 kinds of inulin have been found, including 11 families of dicotyledonous plants, such as Compositae, Platycodon, Gentianaceae, and monocotyledonous plants, such as Liliaceae and Gramineae. For example, the tubers of Jerusalem artichoke and chicory, the tubers of Indian peony (Dahlia chrysanthemum), and the roots of thistle all contain rich inulin, among which the inulin content of Jerusalem artichoke is the highest.
Inulin molecules consist of about 31 β- D-Furofurfulose is polymerized with 1~2 pyrethrose residues, and fructose residues can pass through β- 2,1-bond connection. D-fructose β Linear linear chain polysaccharides linked by (1 → 2) glycosidic bonds often have a glucose residue at the end, and the degree of polymerization (DP) is 2~60. Inulin with an average DP ≤ 9 is also called short chain inulin. Inulin extracted from natural plants contains both long chain and short chain [1]. The molecular formula of inulin is expressed as GFn, where G represents terminal glucose units, F represents fructose molecules, and n represents the number of fructose units
