Action Principle
Pullulanase is a kind of isoamylases. It exclusively hydrolyzes pullulan, amylopectin and the α-1,6-- glucosidic bond. Working with Glucoamylase and Beta Amylase can speed up the reaction and improve the content of glucose and maltose.
